I ordered a customized Kevin Harvick shirt with the Budweiser logo on the front of the shirt so that I can wear it at the bar I work at. However I recieved a shirt with a large 29 on the front instead. I called customer service and they said they had made a mistake and would send me the correct shirt. I recieved the WRONG shirt AGAIN!I am now waiting for the 3rd shirt to come and praying it will be the one I ordered this time. I got this to wear at work and a large 29 is not something my boss would allow. Advertising for Bud is something I can wear while showing my team spirit. I am also surprised in the material, it is very light cotton and FYI sizes do run large. I am thankful for the great customer service I amrecieving, I am just dissapointed with whoever is doing the customizing.

Standard Gluten Free Flour Recipe

For anyone who wants to bake Gluten Free at home I thought I would post a great standard Gluten Free Flour Recipe to keep on hand in your pantry. This is much cheaper than buying all of the pre-made ones that are on the market.

Yield: 9 Cups

Gluten Free Flour Recipe:

3 Cups - White Rice Flour

3 Cups - Brown rice Flour

2 Cups - Potato Starch

1 Cup - Tapiocal Flour

** Be sure to add Xanthum Gum as needed in each seperate recipe
(I find this insures the best consistancy depending on what you are baking)

Gluten Free Pie Crust

Well tomorrow is Thanksgiving, my favorite holiday!! I wanted to share with everyone my favorite pie crust recipe. I have had rave reviews :) I hope y'all enjoy and have a happy and safe Thanksgiving!!!


Pie Crust Recipe

1 1/2 cups White Rice flour

1/2 tsp Baking Powder

1 TB Sugar

1 pinch Sea Salt

1 large Egg, slightly beaten

2/3 cup Melted Butter or Margarine

Mix together and store in fridge for a few hours or over night. It is easier to work with that way.

Roll out onto contact paper or Aluminum foil then, place upside down pie dish over it and then flip both over. I have found that is the easiest way to get it onto the pie dish.

Yield: one 9" pie crust

The Gluten Free Diet

I just noticed on a old post from 2008 I called myself a gym rat. Which I was back then, was being the key word there. :( I really really need to get back into shape not just so that I can look and feel better about myself, but so that I can stay healthy. Ever since I had to become gluten free it is harder and harder to loose weight! It may also be because I have gotten older, and I have to drag myself to the gym now, but part of it is that gluten free grains have more fat and calories in them. They are healthier and better for you, but they do have allot more calories in them. Which by the way is why I was really annoyed when the media suggested that Bill Clinton lost all that weight by going gluten free!!!! Gluten free doesn't make you skinny! Carb free does, but not gluten free people!! It makes me laugh thinking of all the idiots who probably started being gluten free just to loose weight and are probably wondering how they gained 10 pounds! haha Don't get me wrong it is a healthy life style, but if you think you are going to suddenly get skinny like the Clinton's you will be severely disappointed!
Any suggestions on getting motivated again??

So much to say

So in the last couple years since my last post, a lot has happened. I moved from cold Rochester, NY to Charlottesville, VA in September. I love it here! The weather is so much better, all though the snow did seem to follow me this past winter. Virginia saw record amounts of snow, broke nearly every record in the book. So, Winter if you are listening "I am breaking up with you! Please stay in the North where you belong!"
I am closer to NASCAR now which is awesome! Can't wait to go to some races. I went to a charity race in Richmond last week, it was so much fun!
I have a new gluten free cookie find. I will get a picture of the box and share it with everyone. Oh! they are so good. All right will be blogging more now, at least will try. Feel free to follow me on Twitter too, I am on there all the time!

The Best Healthy Pumpkin Bread Ever!

This recipe is delicious! I take some to work for lunch it's healthier then most protein bars. You can add raisins if you like them, they would go well with this bread.
I hope you all enjoy this recipe as much as I do!


Pumpkin Bread

Ingredients
2 tablespoons Apple sauce
1 (386 ml) can pumpkin puree
2 teaspoons gluten-free vanilla extract
2 egg
1/3 cup molasses
1/4 cup rice flour
1/4 cup flax seed meal
2/3 cup oatmeal (ground)
2 tablespoons baking powder
1 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon nutmeg


Topping


2 tablespoons brown sugar


Directions

1.Combine all of the wet ingredients in one bowl.

2. Combine all of the dry ingredients in another bowl.

3. Add the wet ingredients into the dry with a spatula by hand just until mixed together and the same consistency.

4. Spoon ingredients into a lightly greased 9 inch loaf pan.

5. Sprinkle the top of the loaf with the brown sugar.

6. Bake at 350% for 80 minutes.

Describe Yourself: Gym Rat

This machine is a great workout! It has more resistance then most of the machines at the gym but it isn't so hard that a beginner couldn't use it. I got this so that I would have something to use when I didn't have time to go to the gym. The only flaw that I have found is that the monitor is very innacurate. The only thing that is accurate is the time. The distance and calories are way off. Having used numerous machines at the gym I just know that there is no way I can do 12 miles in a hour and have only burned 140 calories. But the machine works great so if I really want a more accurate count I will just buy one that you wear. Other than that it is a great workout, and I highly recomend it!
